🌿 Winter in the Edible Forest ❄️

Winter might look quieter, but it's one of the busiest times of year in the forest. While many plants are dormant, we're preparing for the season ahead.

🌺 Chinese Lanterns are lighting up the garden with their bright red flowers, proving winter doesn't have to be grey.

🍓 Strawberry guavas are ripe and ready to pick. Sweet and aromatic, they're delicious eaten straight from the tree or made into jam.

✂️ Winter pruning is well underway. Opening up the canopy lets more winter sunlight reach the lower layers of the forest, helping plants stay healthy and productive.

🍂 Nothing goes to waste. Smaller prunings are chopped and left on the garden beds to break down naturally, feeding the soil and improving moisture retention.

Food, flowers and colour through the autumn garden 🌿

The veggie beds are full of leafy greens, herbs, flowers and ripening chillies as the garden moves deeper into the autumn season.

Pollinators at work in the Edible Forest 🐝

Our white sasanqua camellias are in bloom throughout the forest right now, drawing in bees searching for pollen and nectar as the season deepens into autumn.
These visits do more than just keep the bees fed.

🌼 Keeps the ecosystem active through the cooler months

Alexanders, also known as horse parsley, is one of those plants that quietly does its job.

It comes through in autumn and spring, adding fresh green growth when a lot of the garden is slowing down.

🌿 Thrives in cooler conditions
🌱 Needs cold weather to complete its lifecycle
🍴 Leaves can be used in salads or added to soups

Once it’s established, it tends to self-seed, which is why we’ve had it returning in the forest year after year.

🌱 A useful one to keep in mind if you’re looking for reliable ground cover through the cooler months.

Swamp hibiscus starting to come into flower.
Originally from the US, it prefers wetter conditions and has done well here in the forest.

Native riberries are an Australian bush fruit, usually found growing in coastal rainforest areas.

Ours are in their second year and already producing well. The fruit is small, bright red and slightly tart, somewhere between cranberry and a mild clove spice.

🍴 In the kitchen� They’re often used in savoury dishes, sauces and marinades, but also work well in jams or infused into gin.

🌿 In the garden� They’ll grow at home in a sheltered spot with good soil and regular water while establishing.

👣 On the tour� When they’re in season, we include them in the tastings so you can try them fresh from the tree.
