Truffle harvest 2025.

Earlier this week we had our first Truffle hunt for the year.

We have had mixed reports from the mainland with some farms having bumper first harvests to some farms being 80% down.

Cygnet River, like the rest of the Island had a long dry Summer and very late opening rains.

This year looks like being a good season for us with our largest French Black Truffle since the farm began.

My daughter Lucy had the privilege of harvesting her first French Black.

We are still to early to do our first hunt therefore caring for these trees is all we can do.

As the weeks clock over not too much changes. The automated irrigation system is doing its job. There’s no fertilising to be done, w**d control is minimal.

One morning I headed out and walked the Truffiere. Walked through all of my Italian Pines and they look beautiful. I head down my first row of Oak trees starting at the Gum Creek Rd end and all looks fine. I turn to walk up the next row and notice the Oaks have been stripped clean of there foliage.

There was not one leaf left on 50 trees. I was shocked and thought to myself that those trees would all be dead in the next couple of weeks. I made a few calls to some industry leaders who all said don’t panic just give them a decent water and they will recover.

Over the next few months those trees had all recovered fully and since then they delivered some nice harvests of French Black Truffles.

Time to eat Cacio e Pepe with Bianchetto Truffle.

This is one of the easiest dishes you can make using Truffles. Your friends will be amazed at the smell and taste of this dish.

Cacio e Pepe means cheese and pepper and only eaten with spaghetti.

First taught to me at a very young age by my mum, no cup noodles back then.

All you will need are the following ingredients.

500g spaghetti
200g Pecorino, grated - at room temperature
30g butter
2 teaspoon of cracked black peppercorns
30g Bianchetto truffle (if not in season use a couple of teaspoons of white truffle oil.

Cook the pasta until al dente - a few minutes less than packet instructions.
Once the pasta is nearly al dente, remove a ladle of the cooking water and set aside. Drain the pasta.
Melt the butter in a frying pan and add pepper. Add the cheese and a very small splash of the cooking water, stirring to make a paste. Gradually add about half the cooking water, stirring all the time to a thick sauce.
Add pasta and another small splash of the cooking water, tossing and stirring furiously until it comes together into a smooth sauce.
Serve with more Pecorino and the truffle shaved over the top.

The battle of the w**ds.....

During our soil preparation we deep ripped the soil to 900mm. Being new to this caper i didn't realise we would bring up years and year of w**d seeds.

What does that mean? We ended up with a magnificent think w**d sanctuary.

Over the coming years through targeted low dose spraying, pulling w**ds, some whipper snipping and help from friends we are at a point where the w**ds are under control.

The truffles have also helped with the w**d control. As the tree matures and the truffle grow the truffles, when active they cause changes in the environment both physical and biological which largely inhibits the growth of other competing plants.

This can be really visible during the growing season. A The brule' (French for "burnt") appears this refers to the circular, bare patches of ground that appear around trees where truffles are growing.
These areas are devoid of vegetation, appearing as if they have been burned, hence the name.

Thats Mother nature doing what it does best and creating an environment where the truffle can thrive while we just lend a helping hand rather than disrupting the balance by introducing nasties.

Irrigation

Our Truffieres water is delivered via a water engineered system. This system allows us to ensure each tree receives the same amount of water.

Irrigating was not as simple as a few rolls of poly pipe and a few sprinklers. We installed 400 sprinklers inside of the tree guards while the trees established them selves. In total the installation included.

400 sprinklers
200m of 50mm blue line
400m of 40mm blue line
200m of 32mm blue line
500m of 25mm blue line
1000m of 19mm blue line
Oasis control unit
Filters etc etc

Our Goldtec irrigation controller allows the control of the system from all around the globe via an app. This allows us to gather data year on year and directly impacts the volume of Truffles we harvest.

2017 ready to plant inoculated trees.

Inoculated truffle trees are essentially tree seedlings that have been deliberately infected with truffle spores, creating a symbiotic relationship where the tree's roots form a network with the truffle fungus.

Truffle spores are introduced to the roots of young seedlings, usually through a process of inoculation where the spores are applied to the roots or the soil around them.

2016 soil preparation on 2.5 acres.

Truffles are best suited to a Mediterranean climate making Kangaroo Island the ideal location. Soil conditioning is paramount in achieving the perfect PH level for Truffles to thrive.

To achieve the correct PH a soil test was conducted by a specialized Truffle Agronomist. We started with the following mechanical preparation of the soil.

Deep ripping to a depth of 900mm.

Based on there recommendations the following elements were added to condition the soil.

88 ton of Meningie Gypsum
6 ton of crushed Dolomite
2 ton of Rock Phosphate
16 ton of Limesand
2.5 ton of Magnesite

This was followed by cross ripping to 900mm. Harrowing and disc plowing and grading to form up tree mounds.

Our humble beginnings.

In 2015 I attended a Truffle seminar in South West Victoria. Having always had an attraction to Truffles through my Dad who grew up in one of Italy's largest Truffle regions. 12 months later Kangaroo Island Truffiere was born.
