Take your white wine out of the fridge 20 minutes before serving.
Pop your red wine in the fridge 20 minutes before serving.

Why? Most whites are served too cold (flavour = snoozing). Reds? Too warm (flavour = flabby). This little timing tweak helps both hit their sweet spot.
