食粒水晶蝦餃，細路都變乖巧
蒸氣一熏，漸漸透出那抹玲瓏的半透明。這是師傅手藝的印記，澄麵與生粉的比例、揉麵粉的力道、蒸籠的火候，缺一不可。隔著那層晶瑩的外皮，隱約可見粉紅蝦肉，如琥珀藏珠。
咬下去，皮韌而不黏，蝦肉彈牙清爽，鮮甜在齒間瀰漫。那一口，是茶樓的煙霧氤氳，是點心車的叮噹聲響，是一家人圍坐飲茶的暖意——這味道，不只是味道，是記憶，是根。
