Potatoe and Mince

ING:
4 potatoes diced into 1.5-2cm cubes
300g Lamb Mince
1 cup chopped coriander
Β½ tsp π’πŽπ”πŠ 𝐒𝐓𝐑𝐄𝐄𝐓 7 Spice
ΒΌ tsp π’πŽπ”πŠ 𝐒𝐓𝐑𝐄𝐄𝐓 Turmeric
ΒΌ tsp π’πŽπ”πŠ 𝐒𝐓𝐑𝐄𝐄𝐓 Sweet Paprika
Crushed chilli (optional)
S/P
2 TBS roasted π’πŽπ”πŠ 𝐒𝐓𝐑𝐄𝐄𝐓 Pinenuts

METHOD:
Shallow fry or airfry potatoes. Drain on paper towel and set aside.
In 2 Tbs of olive oik fry pinenuts until golden and set aside. Cook meat, mix until it becomes fine and seperated. Drain liquid. Add fresh coriander. Stir in spices, salt and pepper. Put potatoes in and mix well so they are coated in the flavours.
Top with a fresh squeeze of lemon and roasted pinenuts. Serve with salad, flat bread and/or yoghurt

Chicken Potatoe Soup
(aka Osiye) using SOUK STREET spices.

INGR:
500g Chicken tenderloins diced
4 Potatoes diced (2cm pieces)
Handful Coriander
4 Garlic cloves
3 π’πŽπ”πŠ 𝐒𝐓𝐑𝐄𝐄𝐓 Bayleaves
1 tsp π’πŽπ”πŠ 𝐒𝐓𝐑𝐄𝐄𝐓 7 Spice
2 tsp π’πŽπ”πŠ 𝐒𝐓𝐑𝐄𝐄𝐓 Instant Vegetable Stock
1/2 π’πŽπ”πŠ 𝐒𝐓𝐑𝐄𝐄𝐓 Turmeric
2 Lemons juiced

METHOD:
Coat chicken in 7spice, salt & pepper and sear in a pot. Before the chicken is cooked through add Bayleaves, Instant Vegetable Stock and Turmeric. Cover with about 1L of boiled water. Simmer for about 20mins or until the chicken is cooked through then remove the chicken. Replace with the potatoes, crushed garlic and chopped coriander, add more water if preferred. Bring to boil again, return chicken to the pot. Cover and turn heat down, simmer until potatoes are cooked through. Once cooked pour in juice of lemon. Serve with vermicelli rice or on its own.

HOW TO: Cashew Cream
1 Cup Raw Cashews
1 Cup water or milk of choice

Soak cashews in hot water for 5-10mins (or cooled water for 2-3hrs).
Drain and rinse cashews.
Add water and cashews to a blender and blend. Add more water if you like a thinner consistency.
