Peanut butter stew is a Zimbabwean classic β rich, creamy and deeply comforting. This version uses affordable chicken pieces and is perfect for winter.
Ingredients
β’ 1 kg chicken pieces (backs, necks or thighs)
β’ 1 large onion, chopped
β’ 2 tomatoes, chopped
β’ 3 cloves garlic, minced
β’ 1 tsp paprika
β’ Β½ tsp curry powder
β’ β
cup peanut butter
β’ 2 tbsp cooking oil
β’ 1 cup water or chicken stock
β’ 1 cup covo, spinach or cabbage, chopped
β’ Salt and black pepper to taste
Method
1. Heat oil in a pot. Brown the chicken pieces and set aside.
2. Fry onion until soft. Add garlic, paprika and curry powder and stir briefly.
3. Add tomatoes and cook down to a thick sauce.
4. Return the chicken. Pour in water or stock. Cover and simmer on low heat for 30β40 minutes until tender.
5. Stir in peanut butter until it melts into a creamy, rich gravy.
6. Add covo, spinach or cabbage and cook a further 5 minutes. Season and serve.
7. Serve with sadza, rice or warm bread. Perfect winter comfort food.
