Peanut butter stew is a Zimbabwean classic – rich, creamy and deeply comforting. This version uses affordable chicken pieces and is perfect for winter.

Ingredients
β€’ 1 kg chicken pieces (backs, necks or thighs)
β€’ 1 large onion, chopped
β€’ 2 tomatoes, chopped
β€’ 3 cloves garlic, minced
β€’ 1 tsp paprika
β€’ Β½ tsp curry powder
β€’ β…“ cup peanut butter
β€’ 2 tbsp cooking oil
β€’ 1 cup water or chicken stock
β€’ 1 cup covo, spinach or cabbage, chopped
β€’ Salt and black pepper to taste

Method
1. Heat oil in a pot. Brown the chicken pieces and set aside.
2. Fry onion until soft. Add garlic, paprika and curry powder and stir briefly.
3. Add tomatoes and cook down to a thick sauce.
4. Return the chicken. Pour in water or stock. Cover and simmer on low heat for 30–40 minutes until tender.
5. Stir in peanut butter until it melts into a creamy, rich gravy.
6. Add covo, spinach or cabbage and cook a further 5 minutes. Season and serve.
7. Serve with sadza, rice or warm bread. Perfect winter comfort food.

Nothing beats a steaming bowl of homemade soup on a cold winter's evening. This budget-friendly recipe uses chicken bits and pieces to create a rich, nourishing broth the whole family will love.

Ingredients
β€’ 1 kg chicken backs or breast bones
β€’ 2 carrots, sliced
β€’ 2 potatoes, cubed
β€’ 1 onion, chopped
β€’ 2 cloves garlic, minced
β€’ 1 cup cabbage or spinach, roughly chopped
β€’ 1 tsp paprika or curry powder
β€’ Salt and black pepper to taste
β€’ 6 cups water

Method
1. Place chicken backs/bones in a large pot with water. Bring to the boil, skim off any foam, then reduce heat.
2. Add onion, garlic, paprika, salt and pepper. Simmer for 30 minutes.
3. Add carrots and potatoes and cook until tender, about 20 minutes.
4. Stir in cabbage or spinach and cook for another 5 minutes.
5. Adjust seasoning and serve piping hot with fresh bread rolls or sadza.

Tip: The longer you simmer the bones, the richer and more nourishing your broth becomes.

Delicious Chicken Gango for the whole family this weekend.

What you need:
β€’ 1 kg Fresh and Frozen chicken necks
β€’ 1 kg Fresh and Frozen chicken gizzards
β€’ 1 1/2 tsp salt
β€’ 2 tsp mild curry powder
β€’ 1 tsp paprika
β€’ 4 tbsp oil
β€’ 1 kg Fresh and Frozen chicken liver + 3/4 tsp salt
β€’ 1 kg Fresh and Frozen chicken hearts + 1/2 tsp salt
β€’ 1 medium onion, chopped + 1 tsp mild curry powder
β€’ 1 tsp garlic, finely grated
β€’ 2 large tomatoes, grated
β€’ 1/2 bundle leafy greens, chopped

Rich, hearty and full of flavour – a crowd-pleaser the whole family will love.

Ingredients
β€’ 1 kg Fresh and Frozen mackerel pieces, cut into chunks
β€’ 1 large onion, chopped
β€’ 3 tomatoes, chopped (or 1 cup canned)
β€’ 2 tbsp cooking oil
β€’ 1 tsp paprika or curry powder
β€’ Salt and pepper to taste
β€’ β…“ cup peanut butter
β€’ 2 cups water or stock
β€’ 1 cup chopped leafy greens (covo, kale or spinach)

Method
1. Heat oil in a pot and fry onion until soft.
2. Add paprika or curry powder and stir for a minute.
3. Add tomatoes and cook until they break down into a sauce.
4. Add mackerel pieces and enough water or stock to cover. Simmer for 10 minutes.
5. Stir in peanut butter and greens; simmer until the stew is thick and the fish is cooked.
6. Season with salt and pepper and serve with sadza, rice or bread.

Tip: Slow cooking allows the flavours to deepen and the peanut butter to create a creamy, rich gravy.
