Mushroom & Rocket Pizza for 2 ๐
๐๐ก๐๐ฅ๐๐๐๐๐ก๐ง๐ฆ
โช๏ธ 2 Cups self-raising flour
โช๏ธ 1 Cup Greek yogurt
โช๏ธ Flour, for surface
โช๏ธ Mushrooms of your choice, thinly sliced
โช๏ธ Baby rocket
โช๏ธ 2 Spring onions, thinly sliced
โช๏ธ 3 tbsp Olive oil (try out ๐ป๐๐๐๐๐๐ infused olive oils)
โช๏ธ 1 tbsp Lemon juice
โช๏ธ Parmesan, shavings or grated (as much as you like)
โช๏ธ Salt and pepper

Heat oven to 180ยฐ. To make dough by hand: Place self-raising flour in a large bowl, with a pinch of salt. Add yogurt and stir with a fork until a shaggy dough forms. Knead the dough on a lightly floured surface until smooth, about 8 minutes. Add a few tablespoons of water if the dough seems dry or a few tablespoons of flour if it is sticky.

On a lightly floured surface, use your Skoert French Rolling Pin to roll the pizza dough into a 30cm oval. Grease an oven pan with cooking spray. Parbake the crust for 5 to 7 minutes at 180ยฐ. Remove from the oven. Set aside.

In a large bowl, toss mushrooms and two-thirds of the spring onions with 2 Tbsp oil and season to taste with salt and pepper.

Scatter mushroom mixture over dough and bake until the crust is golden brown, 12 to 15 minutes.
๐ฆ๐ง๐๐ฃ ๐ฑ
In a bowl, toss baby rocket with lemon juice, remaining Tbsp oil, remaining spring onions, and 1/4 tsp each salt and pepper. Arrange on top of the pizza and finely grate Parmesan on top.
