A very rustic, home style Tarte Au Citron!

Easy peasy lemon juice squeezy:
2x jars of our lemon curd
Crust:
200g Stone ground Cake Flour
100g Cold Butter, cut into cubes
1 tsp Salt
3 Tbsp of water

Method:
Set oven to 180 Degrees Celsius
1. Form dough by pinching butter and flour together until bread crumb like texture forms, add the water and lightly knead till it comes together and smooth, refrigerate for about 20 minutes.
2. Prepare 8 inch loose bottom tart tin with spray, rol out dough and line tin. Slice off over hang. Prick holes with fork.
3. Bake blind until golden, remove from oven.
4. Pour over Lemon Curd and bake for 10 minutes. Curd will thicken slightly. (Optional: sprinkle thin layer of sugar on top and place under broiler until Caramelized for Creme Brule effect!)
5. Enjoy hot or chilled. Serve with Creme Fraiche 😎
