I've been looking into the possibility of becoming West Virginia's first Mobile Commercial Food Canary.
This will allow me to help people who grow their own food in teaching the canning process as well as perform canning for those who cannot afford to spend the money on the basic equipment.
Now, I know that this idea is unique and for the most part, will not become an overnight success, nothing is.
I hold a Manager's ServSafe Food Protection Certification but, that isn't enough to perform a commercial canning service.
Now, I can perform for Cottage Foods canning services for people once my mobile kitchen has been licensed. I have to add that to the MFU Plan before the inspection date.

Moving right along getting closer to inspection day.
In the designing of the Order/Pickup Window, I've desided to make is low enough that it can be used as a "Drive Trough Window" which is perfect for rainy and cold weather days. Your thoughts?

As the opening of the MFU gets closer, final touches to the menu will be done.
I'm working on an "Inter-active" Menu where the customer can see the total price of their menu selections. Really difficult right now on just how to design it so that it isn't complicated. So far, no luck. But I am working on it.

I know this project may seem to be taking longer than expected, but I am moving carefully and deliberately. The first time, I rushed and did not take enough time to understand every part of the food service industry. Now, I have a better understanding and the advantage of seeing the business from inside a successful restaurant, gaining the experience and education that would have helped me plan more effectively before.
Success does not always happen immediately. Sometimes it takes a few wrong turns before we find the right path.

Monday, August 3, 2026, I submitted to the Health Department Mobile Food Unit Food Establishment Plan for approval to start building the Wild Wonderful Waffle Wagon Mobile Food Unit. Today, the plan was approved. :)
