Peach upside-down cake — no caramel required. 🍑 by Chop Happy

Two swaps change everything: butter and brown sugar go straight into the pan (no stovetop, no thermometer), and olive oil + Greek yogurt keep the crumb impossibly moist. Flip it after 10 minutes and it looks like you spent hours.

🍑 Peach Topping: 3 tbsp melted butter · ⅓ cup brown sugar · 3 ripe peaches, sliced
🎂 Cake: ½ cup olive oil · ½ cup Greek yogurt · 2 eggs · 1 tsp vanilla · ½ cup sugar · 1¼ cups flour · ½ tsp baking powder · ½ tsp baking soda · ¼ tsp salt
350°F · 35–40 min · 9-inch springform pan. Cool 10 min, then flip.

.nir’s go-to green chopped salad recipe:

Serves 6

3 cucumbers, chopped small
4-5 celery stalks, chopped small
1-2 fennel bulbs, chopped small
1 bunch fresh dill, parsley, or cilantro, finely chopped
1 cup toasted walnuts or pecans, chopped
1 cup shredded parmesan (optional)
1 teaspoon Dijon mustard
Juice and zest of 1 lemon
4 tablespoons extra virgin olive oil
1 teaspoon salt
Freshly ground black pepper

Make the dressing: place the Dijon, lemon juice, salt and a few cracks of pepper into a large bowl and whisk until the mustard dissolves. Slowly whisk in the olive oil until an emulsified dressing comes together.

Assemble the salad: add the cucumbers, celery, fennel and dill into the bowl with the dressing. Toss the salad until everything is mixed well. Taste and adjust seasoning if needed.

Turn ‘s Korean-style marinated short ribs into the ultimate summer street tacos 🌮🔥 Sweet, smoky, spicy, and loaded with crunch in every bite. The gochujang crema takes these over the top… and honestly, I’m already making them again this weekend.

Gochujang Crema:
5 oz nonfat Greek yogurt
1–2 tbsp gochujang paste
Half a lime, juiced
~1 tbsp cold water
Add everything to a blender and mix until smooth and creamy.

Apple Slaw:
1 cucumber, diced
1 green apple, diced
2 tbsp rice wine vinegar
1 Lime, juiced
1/2 shallot, diced
1 tbsp honey
Salt
Sesame oil
Whisk together the vinegar, lime juice, honey, and salt. Toss with the cucumber, green apple, and shallot, then finish with a drizzle of sesame oil.

Grill the Korean short ribs, chop them up, load into warm tortillas, top with the slaw and crema, and enjoy 🌮🔥
