This uncapped frame of honey tells a story.

The color is dark amber with red and orange undertones.

Nectar sources:

Tulip Poplar
Blueberry
Blackberry
Clover

It has a smooth profile and a surprisingly buttery flavor with floral notes.

The process:

1. Foragers collect nectar and bring it back to the hive.

2. House bees process the nectar, repeatedly transferring it between bees while enzymes begin converting sugars.

3. Bees spread the nectar into cells and fan their wings to evaporate water. Fresh nectar may start around 60–80% water.

4. Once the honey drops to roughly 17–18.6% moisture, bees consider it stable enough for long-term storage.

5. Then they cap the cells with wax.

6. We remove the supers (excess honey above the queen excluder).

7. We manually uncap the cells.

8. Then we place the frames in the extractor.

9. The honey is extracted into 5 gallon containers.

10. We place the empty frames of comb back into the supers to be utilized again.

Our bees are overachieving this season and we extracted the first batch of raw honey yesterday.

The average weight per frame was 3.45lbs with a moisture content of 16%.

We plan on extracting the next batch this weekend.

These bees won’t let any drops of honey go to waste. They collect it and place it back in the cells.
