Getting to live on the east coast has been such a treat; access to the finest of the Atlantic's cool northern waters. Not many ingredients from the sea are sustainable anymore, and haven't been for a very long time. These mussels come from a regenerative family sea farm, a sustainable source.
This dish, inspired by a recent trip to Mexico, made with what's around my area.
Smoked Bangs Island Mussels, cilantro-preserved lemon aguachile, Persian cucumber, avocado and spring chilies. Don't forget the tostadas.
