4.5 pounds of candy just went in the trash.

Today's batch was one of my best technically. Everything ran on schedule. The cut went perfectly. My technique has come a long way and today I could feel it. This was supposed to be a win.

Then I tasted it. Something was just wrong.

After some digging, I'm pretty sure the culprit was a bad bottle of flavor oil. I'd finished one bottle mid-batch and pulled from a fresh one to hit my full load. The new bottle was the problem. Not my process. Not my temps. Not my pull. A bad bottle.

That one stings in a specific way. This is a two-market week, and tonight was a production night I can't get back. I'll be heading into both markets lighter than I want on inventory, and at least one flavor probably won't last through the weekend.

You can control your technique. You can control your ratios. You can't always control what's in a sealed bottle from your supplier.

The batch is gone. The oil is getting sent back. And now I have a new step in my process: smell and taste-test every new bottle before it goes anywhere near a cook.
Small batch means small margins for error. It also means I catch it before it ever reaches you.

Quick Monday update: we have two markets this week. Friday, May 1, from 5p-9p we'll be in downtown Troy, Illinois for First Fridays. Saturday, May 2, we're in downtown Lebanon, Illinois from 9-4. Full flavor selection from both the Spice Rack and Ice Cream Parlor lines at both markets. Hope to see you there!
