Blueberry Coffee Cake
Very rich and very easy!

2 cups flour
1 tsp. Baking powder
1/2 tsp.salt
1 can blueberry pie filling
1 cup oil
1 cup sugar
4 eggs
Combine ingredients except pie filling. Put 1/2 of dough in 9x13” pan. Spread all of pie filling on dough. Put rest of dough over that. Bake at 325 degrees for 35-40 min. May drizzle with a frosting while warm or put cool whip on when serve.

Best onion Soup ,
4 Tbs. Butter in saucepan
Sauté 4 lg sweet onions, sliced
Sprinkle 1Tbs. Sugar on them while sautéing.
6 C. Beef broth (I used “Better than Boullion” mixed as says) (I always add a little extra to taste)
2 Tbs. Worcestershire sauce
Salt and pepper to taste
Simmer
When serving, float piece of buttered, toasted garlic bread. Sprinkle Swiss cheese on top. ( I did neither of these!). I made rolls! Ha! Zibby

Best Brownies
This recipe came from a best friend of about 53 years
2 C. Flour
2 C. Sugar
Sift together
Then in a pan bring to a boil:
1 stick butter
4 Tbs. cocoa
1/2 cup Crisco
1 C. Water
Pour over sugar and flour. Mix well.
Stir:
1 tsp. Baking soda
1/2 C. Buttermilk
And then add:
2 eggs
1 tsp. Vanilla
Mix all together.
Pour into big cookie (jelly roll) pan ( that has edges on it )
Bake at 375 degrees for 15 to 20 min. Or until toothpick comes out clean.
Cool and then frost with:
1/2 stick butter
3-1/2 Tbs. milk
2 Tbs. cocoa
1/2 tsp. Vanilla
Bring to boil and then add 2 cups powdered sugar. Beat and then spread on cooled brownies. May add chopped nuts, if you like them.

7 tbs. flour
2 tbs sugar
1 tsp. Soda
1/2 tsp. Salt
2 large eggs
3/4 tsp. Vanilla paste
Butter for frying
Warm syrup, for serving

HERE IS ANOTHER RECIPE FOR THE HOLIDAYS!

Roadhouse Buns
I put this in the bread machine in this order, but you can do them by hand.
1 egg
1 cup almond milk
2 Tbs. butter
1/4 cup sugar
1 tsp. salt
3-1/4 cups flour (bread flour is you wish)
3 tsp. yeast
Knead and let rise.
Don’t take much time rolling them out, just form balls with your fingers and place on baking sheet and let rise again.
Bake 375° for 12 to 15 min.
Brush with melted butter after baking.

CHRISTMAS RECIPES YOU'LL USE OVER AND OVER.....

WALNUT CARMELS

These are just the most wonderful “carmels” as us Rednecks write it! And just as easy!
2 cups brown sugar (I use light)
3/4 # butter
1 can sweetened condensed milk
2 cups white sugar
2 cups white Karo syrup
2 tsp. vanilla (I use vanilla paste, the brand is Mexican Vanilla Bean Paste made by Blue Cattle Truck Trading company which you can find at the better kitchen stores)
1 cup chopped fine walnuts (opt.)
Place ingredients in a 4 qt. cooking kettle, EXCEPT vanilla and nuts.
Bring to 245 degrees on candy thermometer. Remove from heat, add vanilla and nuts. Pour onto a parchment paper lined 17” X 12” jelly roll pan. No muss. Let cool naturally in a very cold place. In South Dakota we just put pan on the bed in the back room, ha! When cool, cut into squares with kitchen shears, then wrap individually with wax paper. This makes quite a few so a very fun thing to share with your neighbors!

The Easiest Cauliflower Pizza Crust from Margaret
This cauliflower pizza recipe is as FAST as it gets, and has a truly bread-like texture! Serves: 1 large crust
Ingredients
2 pounds frozen cauliflower florets, thawed
1 egg, lightly beaten
1/2 cup chèvre (soft goat cheese)
2 teaspoons dried oregano
1 teaspoon dried basil
1/2 teaspoon sea salt
Instructions
Preheat the oven to 400ºF and line a baking sheet with parchment paper. In a large food processor fitted with an “S” blade, pulse the cauliflower florets several times, until a ricelike consistency is achieved. Pour the cauliflower into the center of a thin dish towel, then twist it up and use your hands to firmly wring out moisture. Quite a lot of liquid should be released, leaving you with a dry lump of cauliflower pulp.
Place the cauliflower pulp in a large mixing bowl and mix in the egg, chèvre, oregano, basil, and salt, stirring well to create a uniform mixture.
Transfer the cauliflower mixture to the baking sheet and use your hands to press the crust firmly into a large circular or rectangular crust, about 1/4 inch thick. Be sure to pack the cauliflower mixture together firmly and evenly, leaving no thin spots where the crust may crack. Bake for 30 minutes, until the top is dry and golden, then carefully flip the crust over and bake for another 10 minutes. Use immediately as a pizza crust or allow the flatbread to cool and slice it to use as sandwich bread.
To complete the pizza, add your favorite sauce and toppings and then bake for another 10 minutes at 400ºF, until the toppings are heated thoroughly. Slice and serve hot.

Cinnamon Roll Apple Pie Cups from Lolly
2 (16-18 oz) packages refrigerated cinnamon rolls
1 (21 oz) can apple pie filling
Icing from cinnamon roll package or ice cream for serving
Preheat oven to 350 °
Spray a 12-cup standard muffin tin with nonstick baking spray
Press one cinnamon roll piece into each muffin cup
Fill each cup with apple pie filling
Bake for 15-18 minutes until golden brown
Drizzle icing on top or serve with ice cream
