Dubai Chocolate
You might have seen this flavor trending during late 2023. I didn’t get on the bandwagon until now, and I was missing out! The pistachio cream that makes up the main part of the filling is very similar to my Pistachio Gianduja bonbon that I make during the fall. The filling is pistachios, a bit of tahini, and just enough white chocolate to make it thin enough to mix. We mix that pistachio cream with kataifi that was toasted in butter. This gives the bonbon an irresistible buttery crispness. The filling is piped into Belgian milk chocolate shells. It’s definitely worth a try!
