Tough steak vs. tender steak? Usually comes down to the grain.

The grain = muscle fiber direction. Those lines you see in raw meat.

Coarse grain (flank, skirt): hot and fast, slice thin against the grain.

Fine grain (ribeye, filet): more forgiving, still slice against the grain.

Rest it. Find the grain. Slice across it. That's the whole secret. Happy grilling!
