There are plenty of ways to make this dish your own (check out the Reviews & Tweaks at the bottom of the recipe page for ideas), and easily frozen for future meals. Try swapping white potatoes for sweet potatoes or squash.

Mexican food numero uno - Horchata: This is a chilled & sweetened beverage (agua fresca), and the Mexican version is made by soaking rice and flavoring it with cinnamon and sometimes vanilla (although there are many variations).

Served over ice, this is one of my very favorite summertime drinks. Many recipes incorporate milk, but you can certainly omit the milk and make a non-dairy (and arguably more authentic) version. You can also find powdered instant drink mix at the grocery store.
