I don’t have a tempering machine so I do all of this chocolate work by hand. Well the other day I tempered chocolate 5 times and every time this was the result. I was positive that the room was not too warm and I was heating it up high enough. I did everything correctly and yet this was consistently the result. I was about to flip a table over so I took a break and thought about it overnight. The next day I decided to use a different thermometer, a probe instead of my laser thermometer, and wouldn’t you know it, that was the issue. My laser thermometer was off by 3 degrees and in the chocolate world that’s a lot!
I was seriously starting to doubt myself and my abilities but then just a little common sense, trouble shooting, and boom! Problem solved. 🙌🏻🙌🏻🙌🏻
Lesson of the day: Always have a back up a plan and know how to do things more than one way! 👌
