🍻 New Brouw! Magazine no. 34 is out!
A couple of weeks ago, the newest edition of Brouw! Magazine was published and we read Derek’s article about Saison beers with great interest.
Saison is a beautiful and unique beer style, but also one that is not always easy to control.
One important finding deserves attention:
➡️ in too many cases, the declared ABV on the label was not confirmed by standard EBC methods.
That is a problem but it is a problem that can be solved.
The reason may be linked to the yeast used for fermentation. Saison yeasts are tricky to control, and if this is not properly included in calculations and process control, the final beer may not match what the brewer thinks is happening.
For us, the conclusion is clear:
✅ better process design
✅ better fermentation control
✅ better analytical testing
✅ better understanding of yeast behaviour
This is what we present in our column, we show how we worked with and on fermentation control: following sugars, understanding yeast activity and helping brewers stay in control of the process.
Good beer needs creativity but professional brewing also needs control. 🍺

I am leaving Szkoła Fermentacji with a lot of useful conversations and a clear message: sugar control matters across the whole brewing ecosystem. 🍺
During the event, I had the chance to speak with brewers from different types and sizes of breweries, as well as academics working on topics ranging from wort preparation innovation to low- and non-alcoholic beverages.
What connected many of these discussions was the same practical challenge: understanding fermentable sugars better, earlier and more often.
For large-scale production, this means better process control and consistency.
For craft breweries, it means making better decisions during fermentation and packaging.
For research teams, it means having accessible data to test ideas, compare processes and move faster.
This is exactly where Beer-o-Meter can help: by making fermentable sugar testing easier to perform frequently, whether you are running industrial processes, craft-size batches or experimental work.
One thing that stood out to me was how large breweries combine innovation with efficiency. Not by simply buying every new tool available, but by building a culture that stays open, curious and focused on continuous improvement.
That mindset is relevant for breweries of every size — and for academic labs as well.
Events like Szkoła Fermentacji show that progress happens when brewers, scientists and technology providers talk openly and look for practical ways to collaborate.

Great week with from ROVI 🇺🇸🍻

We’re really happy we could use this time to strengthen our collaboration and dive deep into Beer-o-Meter together. The focus was simple: make sure Santiago is fully equipped to support US brewers with real, practical use cases.

We went through everything. How the product works, how we run our tests, and how we deliver consistent quality in our services. We also discussed the less visible but equally important parts like logistics, sample handling, and delivery workflows. All the best practices we’ve developed in the Dutch market are now ready to be transferred to our trusted partner in the US.

Of course, training wouldn’t be complete without brewery visits 🍺
We spent time with our customers to show how we build and maintain relationships, and what it actually looks like to work side by side with brewers on the floor.

Cherry on top was a tasting workshop by 👃🍻
Building a shared language around flavor is key when connecting process to outcome.

And yes… we also made sure to stop by our favorite local spot, 😉

This week, we had the pleasure of learning from Derek Walsh about the art of beer tasting 🍻

For our team, it was a valuable learning experience and a good team building activity. Every day, we work with laboratory data, numbers, and analytical results. This workshop gave us the opportunity to connect that data with our own sensory perception, guided step by step by Derek’s expertise.

We had a chance to see how to do it professionally and start learning how to professionally taste beer:
👃 How to identify and name aromas
👅 How to describe flavors with precision
🔬 How to dissect the structure of a beer
🧠 How to link sensory insights back to analytical data

Thanks to this experience we will be equipped with new tools that will support our work in the lab and how we support brewers with better, more holistic insights.

It was also a fantastic team activity, stepping out of our usual routines and collaborating in a completely different way 🤝

And one thing became very clear: tasting beer is a profession in itself. It requires training, focus, and vocabulary and it’s definitely not as easy & enjoyable as it looks!

Big thanks to Derek for guiding us through this journey 🙌 And we will continue educating ourselves!

It took waaaay longer than anticipated, but here is a quick recap of our visit to Chicago and Milwaukee 🇺🇸🍺
Together with Ricardo and Santiago from ROVI, we visited a wide range of breweries — from brewpubs, through regional craft producers, to large national breweries.
Different scale, different priorities… but one thing was the same everywhere:
everyone is focused on production efficiency.
Many of the inefficiencies brewers face don’t come from the brewing process itself, but from something much simpler — not having the right information at the right time.
That’s exactly what we discussed during these visits. We talked about fermentation monitoring, process control, and how faster analytical data can help brewers react earlier and make better decisions.
It was a great opportunity to:
🍺 visit American breweries
🤝 meet ROVI’s customers together
🌍 see Beer-o-Meter working on another continent
💡 discuss how breweries can push their efficiency further
This is just the beginning — we’ll be sharing more about how Beer-o-Meter works in U.S. breweries very soon 👀

Back from 🇺🇸🔬🍺
 
For us, being at exhibits such as SLAS is always important to stay close to the industry. This is where we meet partners who support our laboratory work and supply materials for producing our tests. Strong relationships like these make our daily work possible.
 
But what really made this trip special was meeting people from the beer industry in Boston, Chicago, and Milwaukee. Together with our partner ROVI, we organized several Beer-o-Meter presentations and had great conversations with brewers who care deeply about quality and consistency.
 
The industry is going through a challenging time, but craft breweries in US clearly understand one thing: better process control means better and more reproducible beer. And better beer means faster sales. 📈🍻
 
Grateful for the feedback and opportunities to present Beer-o-Meter and the shared passion for quality.
