When our son Benjamin was born five years ago we realised just how precious he was and wanted the best quality products for him, by the time our daughter Amelia arrived nearly four years later we had a good idea what products were out there and had tried and tested a lot of things. Great snack for the little ones lunch boxes and a great way to get veggies in to them 😄

-2 ¾ cups all-purpose flour
-¼ cup sugar
-2 teaspoons baking powder
-½ teaspoon sweet paprika and ½ teaspoon smoked paprika (I used 1 teaspoon smoked paprika)
-¾ teaspoon kosher salt
-¾ cup milk
-½ cup vegetable or canola oil
-2 eggs
-1 cup thinly sliced spinach leaves
-¾ cup crumbled feta cheese
-½ cup drained roasted red peppers, chopped

Preheat your oven to 375ºF. Spray 12 muffin cups with Pam. In a medium bowl, whisk together flour, sugar, baking powder, paprika, and salt. In a large bowl, whisk milk, oil, and eggs. Add dry ingredients to wet ingredients and whisk until just blended. Fold in the spinach, feta and peppers. Divide batter among the muffin cups. Bake muffins for 25 to 28 minutes, until a toothpick inserted in the center comes out clean. Cool for 5 to 10 minutes. Store your savory muffins in your fridge, and your family will enjoy this healthy snack all week!
