Dinner is back at Hatch and we are celebrating from Thursday by being open everyday for the rest of this month for dinner!

Tommy's Kitchen is back with a SPEED SUSHI menu developed exclusively for HATCH!

Chef Tomiya Yu trained at Osaka Cooking & Confectionery College, where he specialised in vegetables and achieved a license to prepare the famously deadly fugu.

His chef experience began in Osaka at different Kappo & Kaiseki restaurants before he caught the attention of Hong Kong New World Millennium Hotel and took on the role of sushi chef at Sagano.

He pursued further as head chef at Gyotaku and became executive chef at Mizutani in Alva Hotel by Royal. As a pedigreed sushi and Kaiseki chef, Yu continues as a private chef and consulting in multiple Japanese fine dining projects.

There is an A la carte option and a chef's choice Omakase Sushi Platter that includes 8 pieces of seasonal sushi!

Chef Simon will share his heritage with us by cooking some of his favorite authentic Jamaican dishes!

Born in Toronto, Canada to mixed ethnicities
(Jamaican, Chinese, European) whose families have all lived in Jamaica for 3 generations, Simon grew up in a family with a long history of chefs and restaurateurs giving him a unique outlook and experience in the F&B world.

We will be serving a set menu that comes with a choice of an appetizer, main, and dessert. There are add on's on a pre order basis available.

AWA AWA head chef Joe Chan started cooking at the age of 12 at his family's Chinese restaurant in Manchester, England. When he was 15, he left his family to learn the secrets of Vietnamese food from an old man he fondly remembers as 'Chi'.

A few years later, after moving to Hong Kong, Joe began expanding into Japanese cuisine; his journey took him all the way to Australia before returning back to Hong Kong.

After 10 years, Joe is ready to share the secrets of his formative cooking days when he was learning about Vietnamese cuisine. Joe finally feels he is ready to cook PhแปŸ for his friends!
