More than a mixing bowl ✨

Lemon & Raspberry Olive Oil Loaf 🍋

Soft, light and bursting with raspberries, baked in our beautiful yellow loaf pan 💛

Ingredients�200g sugar, 3 eggs�120ml olive oil, 120ml Greek yoghurt�Zest 2 lemons, juice 1�220g self-raising flour�½ tsp baking powder, pinch salt�120–150g raspberries (tossed in 1 tbsp flour)

Method
1. Oven 170°C fan. Line loaf tin.
2. Whisk sugar + eggs.
3. Whisk in oil, yoghurt, lemon.
4. Fold in dry ingredients.
5. Fold in raspberries.
6. Bake 40–45 mins. Cool, slice, serve.

Perfect for coffee, brunch, or sunny days 🩷
