This we are celebrating National Sausage Roll Day, with Great British Bake Off's Nicky Laceby's homemade Sausage Rolls with Rough Puff Pastry recipe π
Ingredients - makes 24 sausage rolls.
For the Rough Puff Pastry:
β’ 250g plain flour
β’ 200g cold unsalted butter, cubed
β’ A few pinches of fine table salt
β’ 75ml water (add a little more if needed)
β’ 1 free-range egg yolk & a few drops of boiling water (for glaze)
For the Sausage Meat Filling:
β’ 25g unsalted butter
β’ 100g closed-cap mushrooms, chopped
β’ 1 cloves garlic, crushed
β’ Thyme leaves (3 sprigs)
β’ 450/500g pure sausage meat
β’ 1 tbsp Worcestershire sauce
β’ 1 dessert spoon Tabasco sauce
β’ 1 tsp smoked paprika
β’ Chilli flakes, to taste
β’ Blackthorn salt & black pepper
Method:
1. Preheat the Everhot to 220Β°c.
2. Make the Rough Puff Pastry
Mix the flour & salt then coat the butter in the flour mix. Press the butter gently through your fingers breaking it up slightly but not completely. Add water, bring together, shape into a rectangle & chill 30 mins.
3. Filling
Cook the mushrooms, garlic & thyme in butter (5 mins). Although to Cool fully, then mix with sausage meat, sauces, spices, salt & pepper.
4. Fold the Pastry
Roll out length ways to 45cmx15cm, fold into thirds, turn & repeat 3β4 times. Chill 15 mins.
5. Assemble the Sausage Rolls
Roll pastry, cut into 2 long strips. Add filling, fold, seal with egg wash. Slice into bite-size rolls, score, glaze & sprinkle poppy seeds (if wished).
6. Bake
Bake for 30β35 mins until golden, puffed & irresistible!
Serve warm and try not to eat all 24 straight away.
