I made Dandelion Honey a couple of weeks ago, itโs a lovely vegan alternative to honey, and dandelions are packed with vitamins A, B, C & D, potassium and are excellent to aid digestion. Iโll be doing a separate post on the wonders of Dandelions, of which there are many.
This is how I made it ๐
300 fresh dandelion flowerheads
6 slices lemon
1050 ml water
900 sugar (I used unrefined brown sugar because it contains some nutrients that refined sugar loses)
Give the flowers a gentle shake or blow to remove any insects
Place the water, lemon slices and dandelion flowers in a saucepan
Simmer with a lid on for 15 minutes
Leave to cool and infuse overnight
The next day, strain out the flowers and lemon by pouring the liquid through a strainer or muslin cloth. Press down to make sure you get all of that nutritious dandelion juice out!
Weigh the liquid, then weigh out the same amount sugar
Put the liquid back in the pan and add the sugar.
Stir and heat gently at first until the sugar is dissolved, then bring it up to a gentle boil for approximately 15 minutes.
You can test the thickness of your syrup by dropping a little onto a pre cooled plate. Leave for a minute and then test the thickness. If youโd like it thicker, boil for another few minutes and test again.
Pour into clean sterilised jars and put the lids on while it's still hot.
Use it to sweeten tea, on cereals or in smoothies, or anything else youโd usually use honey for. Let me know what you think if you decide to give it a try ๐๐ผ๐ฏ
