Olive oil myth: expensive olive oil is just marketing. Well- not quite!! Early harvest olives produce less oil, but higher quality oil. Pressing with hours preserves freshness. Lower acidity requires careful harvesting and handling and this starts way way before the olive oil reaches the bottle.
There’s a ton of misinformation out there so make sure you read your labels to check when the olive oil was harvested - I guarantee that 90% of grocery store olive oil is at least two years old. Typically olive oil is harvested once a year, depending on the region and climate —> in the Levant harvest usually is between Oct and Dec and we hand pick it so early in the season (Oct 3 2025) and press it at the mill within hours of picking. We also Lab test everything to ensure quality and technical composition.
In other words, better olive oil usually takes more work.
