To say that I love is an understatement. She is such a beautiful person side and out. So inspirational and makes the most delicious food! My family definitely hears your name a lot when I serve them food!

Bananas and peanut butter are a match Made in heaven! On my 4 ingredients and super healthy.
2 bananas
1/4 cup of peanut butter
1/4 cup of chocolate chips
1 1/2 cups of oats
Bake at 360° for 15 minutes
Enjoy!!

OVEN BAKED CRISPY CHICKEN TACOS
Super delicious and easy to make. The kids really enjoyed them. I just made a second bath that ok going to freeze individually. I’ll keep you posted on how that goes

INSTRUCTIONS

Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
Heat 1 tablespoon canola oil in a large cast iron skillet over medium high heat. Add ground chicken, onion and garlic, and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
Stir in green chiles, chili powder, paprika, oregano and cumin until fragrant, about 1-2 minutes.
Remove from heat. Stir in cilantro and lime juice; season with salt and pepper, to taste. Stir in 1 cup cheese until well combined.
Working one at a time, spread chicken mixture on half of the tortilla; top with 1 tablespoon cheese, folding over to seal. Repeat with remaining tortillas to make 8 tacos.
Place tacos in a single layer onto the prepared baking sheet. Brush tops with remaining 1 1/2 tablespoons canola oil.
Place into oven and bake until toasted and crispy, about 12-15 minutes.
Serve immediately with desired toppings.

ELK BURGERS

They were delicious on the grill

CRISPY CHICKEN ZUCCHINI FRITTERS

These are so good, my toddler ate them 3 days in a row.
Healthy and delicious
Recipe below:
- I omitted the cheese but likely delicious.
- I also added Italian spices for some extra flavor
- you can probably air fry. I’m guessing 350° for about 10 minutes

Ingredients
2 medium zucchini about 21/2 cups, grated
1 1/2 teaspoons kosher salt divided
1 lb ground chicken
1 large egg
1/3 cup freshly grated Parmesan cheese
1/4 cup finely shredded mozzarella cheese
1/4 cup green onions - finely sliced
1/4 cup bread crumbs
2 garlic cloves - minced
1/4 teaspoon smoked paprika
1/4 teaspoon ground black pepper
Olive oil for sauteing

Place the zucchini in a towel-lined colander in the sink. Sprinkle with 1 teaspoon of salt and let stand for 10 minutes. Then squeeze out as much juice as you can from the zucchini. Transfer drained zucchini to a large bowl.
Add the ground chicken, egg, Parmesan, mozzarella, green onions, bread crumbs, garlic, 1/2 teaspoon of salt, paprika, and black pepper. Mix until all of the ingredients are well incorporated.
Heat a large non-stick skillet over medium heat and add enough olive oil to cover the bottom of the pan.
Shape the chicken zucchini mixture into 1-inch thick patties. Cook each side for about 4-6 minutes or until golden brown. You may need to cook the patties in batches depending upon the size of your skillet. Add more oil to the pan as needed for subsequent batches.
Place the fritters on a paper towel-lined baking sheet to blot away the excess oil.
