Tepache day three:

The large pieces are removed & batch was strained into a clean fermenter while prepared clean bottles. Tepache was then poured into flip top bottles to be burped for next couple days to get a nice carbonation.

We LOVE trying new things in fermentation. This week, Michelle is making Tepache. Tepache is a pineapple based fermented beverage in Mexico.

For this batch we used dark brown sugar, the peel and rind of a pineapple, fresh ginger, and cardamom seeds. Covered with a muslin bag (or cheesecloth) and leaving it for three days to ferment. Stay tuned to see how this project turns out!
