I started Aurelius Fine Oils & Balsamics while still serving in the military as an answer to my uncle's question during a family dinner in Sacrofano, Italy in 2016: Would Canadians be interested in this olive oil? For 2 years I did small popups at bakeries and local markets on weekends. After getting out there and networking, I was lucky enough to start selling to a few top restaurants here in Ott

awa (Riviera, e18hteen, Whalesbone). Then in 2018, I decided to leave the military and open my retail tasting boutique in Wellington West. Since 2016 I have been personally importing and sourcing my products and catering to Ottawa's most elite chefs and critical foodies. Our authentic, small batch and artisanal products have garnered a strong reputation within those circles. We also offer an amazing quantity of flavoured olive oils and balsamic vinegars which will surely keep you coming back for more. Olive oil quality has nothing to do with what country’s on the label.

It comes down to three things: the quality of the fruit, how fast and carefully it’s picked and crushed, and how it’s protected and stored after that. That’s it.

Our Early Harvest is from the Paolocci Mill, third-generation millers obsessed with quality. Everything is packed and bottled in dark glass to protect it from light until it’s in your hands.
