Creamy Nutmeg Potatoes
Ingredients
• 4 potatoes, thinly sliced
• 1 cup cream or milk
• 1 garlic clove, crushed
• 1 tbsp butter
• ½ tsp freshly grated nutmeg
• Salt and black pepper

Method
1. Preheat the oven to 180°C.
2. Rub the baking dish with butter and garlic.

Simple Black Pepper Pasta (Cacio e Pepe Style)
Ingredients
• 200g spaghetti
• 2 tsp freshly ground Imperia Ceylon black pepper
• 1 cup grated parmesan or pecorino cheese
• 2 tbsp butter
• Salt
• A splash of pasta water
Method
1. Bring salted water to a boil and cook the spaghetti until al dente.
2. While the pasta cooks, melt the butter in a pan over low heat.
3. Add the freshly ground black pepper and let it warm gently for 1–2 minutes.
The aroma should become deep, earthy, and slightly smoky.
4. Reserve 1 cup of pasta water, then drain the pasta.
5. Add the pasta to the pan with the pepper butter.
6. Stir in the cheese slowly, adding splashes of pasta water until it becomes silky and glossy.
