Old Fashioned Vegetable Soup

1. 3 Lord’s Country Ham hocks-I pressure cook mine in 5-6 cups of water or you can boil until tender-reserve the lean ham bits and discard the fat and bone. Strain the broth into a large soup pot.
2. 4 cups fresh tomatoes -I used 6 large tomatoes and put them in boiling water for a few minutes until the skin popped. Peel, remove the tough core and chop-you’ll use juice and all. You can also use a 28 oz can of diced tomatoes.
3. 2-3 cups sliced fresh okra
4.2-3 cups cooked butterbeans or white variety of peas with some of the juice.
5. 2-3 cups of cooked creamed corn
6. 4 medium potatoes ,diced(if you’re planning to freeze omit the potatoes)
7. Approximately 1/4 head of sliced fresh cabbage -2-3 cups
8. Reserved ham pieces
Salt and pepper to taste
Add ingredients in order listed, simmer covered about 45 minutes until all the vegetables are tender.
Taste and adjust the seasoning.
This is a great soup to make when you plan on having leftover peas, butterbeans, and corn. My grandma lived to be 100 and this was how she always made her soup.

Happy New Year from all of us here at Lord’s Sausage & Country Ham!

Happy New Year! We hope that everyone eats lots of greens and black eyed peas today for prosperity and good luck in 2018! Don’t forget to season them up with Lord’s country cured meats!

We are having crackling bread with our feast today. This easy recipe only has 4 ingredients and is delicious!

1 1/2 cups Lord's Cracklings (chopped)
4 cups hot water
4 cups plain (I prefer white) cornmeal
1 tsp salt

Soak the cracklings in hot water for 30 minutes. Add the cornmeal and salt and mix well. The mixture should be the consistency of a soft cookie dough. Depending on the meal you may have to add just a little more meal and salt.

Drop the mixture by heaping tablespoons onto greased foil covered baking pan and flatten using fingers to about 1/2 inch thickness.

Bake at 400-425 degrees for 30-40 minutes until crispy and golden brown.

Recipe can be halved.

If you prefer a softer cornbread you can add the soaked cracklings and some of the water to replace some of the given liquid in your favorite recipe, even if your recipe is from a box.

You can also stir chopped cracklings directly into your favorite recipe without soaking. Enjoy!

Sausage Balls

-1 pound of Lord's hot sausage (can use original if you don't want the extra kick)
-1.5 to 2 cups of Bisquick
-16oz block fresh grated extra sharp cheddar cheese

Mix all ingredients well and roll into small balls. Bake at 350 until done and slightly browned.

My dinner tonight - pinto beans cooked all day with Lord's country cured sides! This is a delicious and budget friendly meal!

I served this with chow-chow, fried squash, cucumbers and Vidalia onion with apple cider vinegar, and buttermilk cornbread!

Pinto beans:

Soak 1 pound of pinto beans overnight.

Drain/rinse and pick through the beans the next morning.

Place beans in a crockpot with Lord's country cured sides and cover with about 1 inch of water.

Cook all day in crockpot (I cooked mine on high and they were perfect).

In the last hour or so of cooking taste and add seasonings as needed (I added more salt and some black pepper).

Serve with chow-chow and fresh diced Vidalia onion if desired.

Country ham and biscuits for breakfast this morning!

Country ham is salt cured so of course it does have a salty taste on its own. I grew up eating country ham with red eye gravy, and I still love it!

For something a little different try it served with your favorite fruit preserve. My favorite is fig! The saltiness of the ham with the sweetness of the fruit creates a delicious balance.

Need me some Lord's Sausage in Daytona Beach.
Talk about great customer service! My local store seemed to be out of stock every time I went, so I was afraid they had quit carrying it. I contacted Lord's over the weekend, and today they confirmed that the grocery chain still carries it, and asked me which store I shopped. They just now told me that their truck driver will be sure to drop off a case at that store. They even gave me the driver's phone number. This is really going above and beyond. I'm a fan for life.

I bought some of your pork cracklins and was going to drop them in the fryer, but that did not turn out well and there are no directions on the package.... is there a secret to making these? the directions say "cook to 160 degrees"

I love your fresh sausage links for grilling. I bought a big pack at Wal-Mart here in cochran to grill for super tonight. They were so salty I could barely eat them. You can't even taste the sausage for the salt. I paid a good price for them n they r terrible. What in the world happen. Somebody mess up big time.
