Feeling bold? Try Kodiak Attack: our medium/dark mix that makes for a satisfying sip! Dark roasted coffees naturally contain less caffeine than their lighter counterparts because the caffeine is essentially cooked out of the bean; that's not to say that they are decaffeinated by any means, but it makes dark coffee a good "all day" coffee choice for those who don't want the energy buzz of breakfast roasts.
When you peek into a whole bean bag of this roast mix, you may notice a sheen on the beans; this is a normal characteristic of dark roasts- the beans will "sweat" oils once they have reached a certain roasting temperature (about 480⁰F in our roaster). We allow some sweating of our dark roasts because we want to get that good caramelized flavor.
Pro tip: though some moisture on dark roasts is normal, beware of blackened, soaked looking beans! Many companies try to pawn off their cheap, charred bean carcasses as "Italian roasts" to sound fancy. Don't be fooled, they do this to kill anything that might be living on the old, probably moldy, beans they bought at discount. You are essentially drinking ash water when you brew this kind of sad, dilapidated coffee, and that's why poorly prepared dark roasts tend to rumble people's stomachs...
But have no fear! We don't allow burnt coffee into our bags. My motto is, if I wouldn't happily drink it, I won't sell it, and since I have turned into a coffee snob, I'll only stock the good stuff for your enjoyment. 😋☕️
