Let's go with the recipe for Jollof Rice, one of the most beloved dishes in Ghanaian cuisine. Here's how you can make it:
Ingredients:
2 cups of long-grain parboiled rice
1 onion, finely chopped
2 tomatoes, blended
1 red bell pepper, blended
1 green bell pepper, finely chopped
2 cloves of garlic, minced
1 teaspoon of ginger, grated
1 teaspoon of paprika
1 teaspoon of thyme
1 teaspoon of curry powder
1 teaspoon of dried or fresh thyme
1 cup of chicken or vegetable broth
2 tablespoons of tomato paste
3 tablespoons of cooking oil
Salt and pepper to taste
Optional: cooked chicken, beef, or fish for serving
Instructions:
Heat oil in a large pot over medium heat. Add onions and cook until softened.
Stir in garlic and ginger, cook for another minute.
Add blended tomatoes and bell peppers, tomato paste, paprika, thyme, curry powder, salt, and pepper. Cook for 10-15 minutes until the mixture thickens.
Add rice and chicken/vegetable broth. Stir well, cover, and simmer on low heat for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
Fluff the rice with a fork, garnish with chopped green bell peppers, and serve hot with your choice of protein.
